Summer Appetizers
Pablano Pepper & Mango QuesadillasDelicious, light and satisfying. This is a tasty appetizer for all occasions. And they're easy to make!
* Makes 16 individual triangles
Ingredients:
- 4 10 inch whole-wheat tortillas
- 4 oz cream cheese
- 1 small mango, peeled & diced
- 1/2 fresh pablano pepper, seeded & diced
- 4 oz pepper jack cheese (optional)
- 2 T cilantro (optional)
1. Dice mango and pepper. The best way to cut a mango is to peel the skin then slice wedges from head down. The seed is quite large and hairy, so cutting it away from the meat is the easiest. Be sure it's ripe for easier cutting and juicier flavor.
2. Thinly spread each tortilla with 1 oz of cream cheese. Then sprinkle half the mango and half the pablano pepper (with 1 oz of pepper jack & tsp of cilantro, if using) onto the cream cheese. Fold tortilla in half.
3. Spray medium frying pan with cooking spray on medium-high heat. When temp is achieved place quesadilla in pan then fry, about 5 min. on each side.
4. Remove from pan and cut into four triangles. Serve hot.

This is such a refreshing salsa in comparison to it's spicy tomato cousin. And the chips are to die for! We could eat this all day . . . with no guilt, I might add!
* Yields 4 Cups
Ingredients:
- 1 apple, peeled and diced (any variation), place in bowl of water and lemon juice to prevent browning
- 1 kiwi, peeled and diced
- 1/4 C diced, fresh pablano pepper
- 4 oz fresh rasberries, halved
- 1/2 lb of fresh strawberries, diced
- 1 T white sugar
- 3 T brown sugar, divided
- 1 T cinnamon
- 2 T of apricot fruit preserve
- 5 (10 inch) whole wheat tortillas
1. Preheat oven to 350F. Chop and prepare all the fruit and pepper, placing apples in lemon juice mix until ready to use.
2. Mix cinnamon & 2 T of brown sugar until thoroughly blended.
3. Combine fruit into large bowl, mixing carefully, then add white sugar, remaining brown sugar, and preserves. Chill for 1/2 hour.
4. Cut tortillas into triangles - cut in half, fold, then cut in half again, then cut into quarters to achieve perfect triangles. Arrange on baking sheet. Spray tops with butter flavored cooking spray then dust evenly with cinnamon/sugar mixture. Bake for 10 min or until perfectly browned. Cool for 15 min. then serve with salsa. The salsa is best when eaten that day. Over time the fruit juices release softening the fruit.
